Spanish Rice

2 tbsp vegetable oil
1 cup uncooked white rice
1 onion, chopped
1/2 green bell pepper, chopped
2 cups water
1(10oz) can diced tomaotes with green chilis
2 tsp chili powder
1 tsp salt

Heat oil in a deep skillet over mediun heat. Saute rice, onion and bell pepper until rice is browned and onions are tender. Stir in water and tomatoes. Season with chili powder and salt. Cover, and simmer for 30 mins, or until rice is cooked and liquid is absorbed. I served the rice with the mexican lasagna with chicken, corn and black beans

I just woke up and now I'm drooling:) I want the whole plate. The spanish rice sounds great. There is a really good spanish style/mexican style rice on recipezaar if you search by ratings. It has you rinse the rice to remove some starch and then saute and then bake in the oven. Tastes great too. Your meal looks super yummy!!

hmm well thank you i will have to check it out. dinner that night was good. my husband is half mexican so this really hit the spot with him.
