Enchilada's

This has to be a household favorite around here. My son ate 2 helpings tonight for dinner. My husband always make sure he is home on time on enchilada night.

2 1/2 lbs hamburger, or any meat you prefer (I've made it which diced chicken and diced steak before, just as good)
Half a onion
2 small cans enchilada sauce, i use 1 hot 1 med
1 can refried beans
4 cups cheese, either cheddar, fiesta blend or monetary jack cheese
8 tortilla


Preheat oven to 350*. Brown hamburger in a large skillet over med high heat, until browned, drain if needed. Add in onion, 1 1/2 can sauce and about a spoonful of beans, heat through. In a 13x9 pan spray with cooking spray, layer half the tortilla's, rest of beans, half the sauce mixture and half the cheese. Repeat layers, minus the beans. Top with the remaining enchilada sauce in the can, on top of the cheese. Bake until the starts to get golden brown along the edges, about 30 mins. Let it cool for a5-7 mins before serving. Can be topped with sour cream, onion, green onion, salsa or any other garnish you prefer. The recipe can be halved.

Mexicorn

So i decided to try my hand in making mexicorn. My husband said it was great. Let me know what you think.

3 cups frozen or canned corn
half of a white onion, diced
1 green bell pepper diced
1 jalapeno, chopped small
paprika, salt and pepper to taste
1 tbsp butter

Heat a skillet over med heat. Add butter, let melt. Add the onion, bell pepper and jalapeno, cook until tender. Add corn heat until the corn is heated through. Add salt, pepper and paprika. and serve.

Sausage Gravy and Buscits

I made sausage gravy and biscuits this morning for breakfast. My kids and husband both love it so much. Both my kids had 2 helpings.




1 lbs sausage, regular
4 cups milk
2-3 tbsp flour
4-10 biscuits
salt and pepper to taste

Heat oven and cook biscuits referring to its package directions. In a large skillet brown sausage over med high heat, until no longer pink. Add 1 tbsp flour to make a roo using the sausage grease. Add milk, mix and add another tbsp of flour. bring to a boil, stirring often. Let it simmer for about 30 min's. Add another tbsp of flour if needed. Add salt and pepper to taste. Cook until the gravy is think as you like.
